Do you happen to have File Search On in KDE Plasma? If so, it will consume a lot of cpu while indexing..
To check: System Settings -> Seach -> File Search

I always disable it in Plasma. In my relatively new Debian 12 it was disabled by default.

Also systemd journals can grow up to 4GB.
What I do is limit the size of journal to 200 MB in
/etc/systemd/journald.conf
by removing # from line
SystemMaxUse
and setting a value 200M (note - value is just M - not MB)

I'd like also to note, that if you have both Mate and KDE Plasma desktops at the same root partition (not as separate installs) there probably will be at least some minor incompatibilities, since Mate uses GTK and KDE PLasma uses Qt graphical UI elements. Also Mate may (or may not - I have not used Mate) use different directories than KDE Plasma for example for config-files.

As a hint -With the ram amount you have (32 GB) a virtual OS will run smootly. So you can use pure KDE Plasma or pure Mate and install another one as a virtual OS. I have an old 2011 iMac and both virtual Windows 11 and KDENeon and no problems. Virt-Manager is a little bit more difficult to install than Virtualbox but it consumes less CPU.
Both are good options. A good Virt-Manager installation guide here [HowTo] Getting Started with Virt-Manager & QEMU-KVM
