Pretty sure PipeWire is the default install only for Gnome; all others default to pulseaudio. But that seems to be contradicted by your output from pactl list sinks. You can confirm PipeWire is active (or not) with systemctl --user status pipe*. Your inxi output lists 2 audio servers: pipewire and pulse. I have seen various posts saying that problems occur if you have both. My inxi shows only pipewire and not pulse. Maybe you need to remove pulseaudio.
