As far as I know the raspberry pi 5 is still not supported since the mainline kernel don't supports it - https://raspi.debian.net/faq/

Since kernel 6.12 has now basic support for raspberry pi 5 I think it could be possible to create a Debian image but it wouldn't support all functionalities of the hardware. Maybe even the latest images work already if the new kernel is available for them. Since I only have a raspberry pi 4 I can't test it.
