That's just how it is. Trixie will show trixie/sid as version until Trixie becomes stable, then it will change to forky/sid.
You will stay on Testing with your sources like that. When the pre-release freeze starts upgrades will slow to a trickle; then after Trixie becomes stable there will be a flood of new packages and that is when Testing can be most dangerous.
It has been written hundreds of times - development versions are not rolling releases but sure you can use them as pseudo-rolling if you want. Good luck!

I understand what you are saying about the updates, being rolling or pseudo-rolling.

I am OK with the nature of updates in Testing. I believe it will still be more stable than Arch based distros.
I came from EndeavourOS, so it is OK with me.
